Lemon Mousse: The Best Recipe

INGREDIENTS:
  • 250 g (0.55 lb) of mascarpone
  • 3 eggs
  • 2 yellow lemons
  • 1 lime
  • 100 g (0.22 lb) caster sugar


PREPARATION:

STEP 1:  Squeeze the juice of 2 lemons and very finely detail the zest of a lime. Blanch 3 egg yolks in 100 g (0.22 lb) caster sugar. Stir in 250 g (0.55 lb) mascarpone in the mixture. Mix, add the juice of the lemons and a little lime peel while keeping aside for the decoration of the dessert. To mix everything.

STEP 2: Aside, mount 3 eggs whites in firm snow (with a pinch of salt if necessary). Incorporate them little by little into the first mascarpone preparation. Proceed gently, lifting the mass to ventilate the whole thing. Place in ramekins and refrigerated for 3 hours.
