Vegetarian Hash



I decided to show you a French recipe: a vegetarian mince with zucchini and carrots

PREPARATION GUIDE:

  • 6 people
  • Preparation time: 15 minutes
  • cooking time: 25 minutes 
  • Difficulty: easy

INGREDIENTS:
  • 1 kilogram of potato
  • 4 large grated zucchini
  • 2 grated carrots
  • 1 onions
  • 3 tablespoons of oil
  • 10 cl of milk
  • 1 tablespoon of tomato paste
  • 600 ml of vegetable broth
  • 2 leaves of laurels
  • 1 sprig of rosemary
  • 1 teaspoon nutmeg powder
  • salt and pepper

PREPARATION:

STEP 1: Peel and wash the potatoes.

STEP 2: Cook the potatoes until tender.

STEP 3: Drain them.

STEP 4: Crush the potatoes. Add milk, nutmeg, set and pepper. Mix well.

STEP 5: In a frying pan, heat the oil before browning the onions.

STEP 6: Add the zucchini and carrots and sauté for 5 minutes.

STEP 7: Add the vegetable broth, tomato paste, bay leaf and thyme.

STEP 8: Cook for 15 minutes.

STEP 9: Remove the bay leaves and the sprig of thyme.

STEP 10: Heat the oven in grill mode.

STEP 11: Pour the vegetables in a baking dish and cover with mashed potatoes.

STEP 12: Grill in the oven until golden brown.
